Innovative technology reduces food waste

Approximately one-third of the total food produced worldwide is wasted – a major contributor to greenhouse gas emissions and food insecurity. Through the Environmental Solutions Fund, Mercy Investment Services is helping to reduce food waste through innovative technology in commercial kitchens – including hotels, hospitals, restaurants and schools – around the world.

Winnow’s hardware-enabled software uses a digital scale, artificial intelligence camera, and a connected tablet to capture, identify, and weigh food that commercial kitchens discard – whether during meal prep or when clearing customers’ plates. The software provides kitchen management with daily data to use to plan menus and portion sizes while reducing food waste and costs, as opposed to relying only on experience to order ingredients and prepare food. Kitchen staff, particularly those preparing non-made-to-order food, use Winnow’s insights to understand how much food they produced, how much customers consumed, and what was left over. Over the past decade, Winnow has prevented $174 million worth of food waste and reduced carbon emissions by 217,000 tonnes in more than 60 countries around the world.
